  10. aka Sweet Potato/Apple Salad

  12. about 4 cups peeled, cubed sweet potatoes or yams
  13. 1 apple, skin on, chopped
  14. 2 stalks celery, sliced
  15. 1 small red onion, chopped
  16. 1 teaspoon fresh ginger, grated
  17. rice vinegar to taste
  18.  
  19. steam potatoes til soft, not mushy
  20. toss all ingredients lightly
  21. dress with vinegar to taste
  22. chill
